Eli is 2!!!

This little boy has changed my life in so many ways and im grateful everyday for the blessing he is in my life. I'm so thankful to my Heavenly Father who sent this little angel to our family. I have enjoyed the last two years so much and I can't wait to see what the future brings.

Incredible Whole Wheat Bread

I'm not a food photographer so the picture doesn't do this recipe justice. 

This is the easiest and most delicious homemade bread ever!! All ingredients go in the mixer then it kneads for 12 minutes. Then straight into the pan it goes! 

It doesn't use expensive perishable ingredients like eggs or milk either so it's a great food storage recipe, and is much cheaper than store bought bread. It's absolutely delicious as sandwich bread! 


EZ Whole Wheat Bread Recipe

 

Ingredients (For 2 Loaves

2 1/2 cup warm water
2 T. instant yeast
1/4 c. honey
3-5c. whole wheat flour (I use 4)
1/2 cup wheat gluten
2 t. salt
1/4 cup nonfat dry milk 
2 T. Margarine/butter/oil
2 T. Apple cider vinegar
1/2 cup Potato flakes 

Mix ingredients in order listed in mixing bowl of mixer with dough hook attachment (like kitchen-aid) for 12-15 minutes. Shape into 2 loaves or rolls, let rise until double or an inch over loaf pan. Place loaves in cold oven and turn to 350 degrees for 28 minutes or until golden brown and sounds hollow when lightly tapped.

Beach Treasures

Mr. Eli is a pretty timid little boy, but hes not shy about touching crabs, hermit crabs, or star fish on the beach.  I love it.  When Bryan was little he called these things and shells and rocks "treasures".  Eli is learning to find beach treasures too!






we were "Skipping rocks".  Eli was just loving throwing them- even caught a picture mid launch.






Hello Alaska!

 We've been here a week and are loving Alaska. Eli did awesome on the trip up! 


He fell asleep SITTING UP next to us before the plane took off.  I rested his head on my lap and he slept for 2 hours!  Halleluiah!

It was raining pretty hard when we were loading up on the float plane but I had to document :)

He has loved riding on float planes since he was 2 months old.  He just snuggles in and looks out the window the whole time.


Eli has loved playing on the beach every day!  And pants just well...get in the way :)



Bryan had some good "Man Time" by grilling up some steaks for dinner!

Bye Utah

Last week was quite the whirlwind! Bryan accepted a teaching job in Sugar City, Idaho 4 days before our planned trip to Alaska. This meant we needed to move EVERYTHING out of our apartment into a storage unit. 

This was the hardest decision I've ever made but we've had such an outpouring of blessings. Our friends fed us this week, recruited their husbands to help is move, our aprtment lease was up just in time so we could cancel without re signing, we cancelled our tv and internet without any cancellation fees, and many other little tender mercies. Now onto our next adventure!

Eli and Mabli

Mabli is the little girl I babysat one day a week this school year. She and Eli have become very cute friends and will miss each other very much!! 





She sure knows how to get what she wants!! 

Weekend trip to Idaho

A couple weekends ago we headed to Idaho for a quick trip. Eli is doing really well on car trips and is learning to entertain himself. This trip's hit was a magnetic fishing game. 



I got to spend some time with a roommate I met my freshman year of college! 



And Eli had a blast at the splash park. 

Crazy to think just 4 years ago I was graduating from BYU-Idaho! Now we live in Utah, have a 2 year old and have used my degree to get two different jobs. 




Wore this sweet thing out! 

And ended the weekend with a bang! Or face plant :)
