Easter Weekend

Bryan and I had a FABULOUS weekend with Greg, Jen, and her amazing family. We stayed in Paradox where we ate, played, relaxed, and ate some more!  The first full day we were there we went to pick asparagus in the fields on the ranch.  I was pretty blind to finding them, but with lots of practice I found a few :) We took home our treasures and had asparagus on toast!  YUM!
The Monticello/ Paradox area is beautiful and we loved leaving the crazy city, and just enjoying the wonderful peace of the country.

Saturday we decorated easter eggs, and the boys went shooting, of course!

I love this picture.... Sidney had a blast!

She was really fun to watch in the pool.  Jen's parents have an "endless pool" So Sidney got pushed around in the current, and she loved it!
The Easter bunny came, and didn't wipe his paws and wasn't potty trained.  He left muddy prints on the counter, poo's, and didn't even finish his carrot!

Sunday was pretty rainy but that did not stop us from enjoying every minute.  After eating more than my share of ham, potatoes, and rolls we played wiffle ball!  I miss having little kids around to play with.

Monday we drove back to Monticello and we went golfing.  I had never been before, so, my score might have been almost double theirs :)   Sidney loved riding in the cart and helping carry the golf balls.

He looks pretty professional!  :)

Thank you Jen and Greg for letting us enjoy Easter weekend with you!  We had a fantastic time!!!  We love you!

Easy Easy Cookies

Last Monday I made "Congratulation" Cookies for Bryan.  He has been accepted to grad school and starts may 2nd!  The degree is a Masters of Education in Teacher Leadership.  I think its going to be a team effort :) But its less than two years!!  Woohoo!!!

I am loving this recipe!!

1 box of any cake mix
2 eggs
1/2 cup of oil (or 1/4 c. oil and 1/4 c. water)

Mix it up, add a few tablespoons of flour to make the right thickness for dough, then roll into balls and bake at 350 for 12-15 minutes.  Yum!

Here comes Peter Cotton Tail

Have you heard of Bountiful Baskets?  Click Here for more information. For 15.00$ you get tons of fresh produce at a cheaper price than the grocery store!  They do not have it in every state, but if its near you, do it!  We went to pick ours up in Draper, which turned out to be the top of the mountain, but it was a beautiful drive.  The community center where we could pick up our basket of produce was next to a park where thousands of easter eggs have been placed for an easter egg hunt!  There were loads of kids wating for the hunt to start!  We wanted to borrow our nieces and nephew so we could take them to the easter egg hunt and run around with them and help them find eggs!

Just as we were leaving, a fire truck came out of the fire house next door with lights flashing and sirens blaring.  The easter bunny was in the front seat waving at everyone!  It was hilarious!  He got out of the fire truck and greeted all the little kids.  We couldn't stop laughing about it all day!

P.S. Where do you find a bunny that lays easter eggs instead of baby bunnies?

4 Onions, 5 cucumbers, 1 celery stalk , 2 bags carrots, 1 bunch of broccoli, 2 heads of lettuce, 2 bags of radishes, 7 apples, 5 bananas, 3 mangos, 1 pkg. of strawberries, 4 oranges, and 2 honey dew melons! I might be missing some, but what a blessing we can enjoy all of this fresh produce for not very much money!

YUM!  we put those bananas and strawberries right to good use!

Wonderful Weekend

Well... we had a fabulous weekend!  And we didn't do anything extravagant, it was just very peaceful.  Do you ever have those moments when you look over at your spouse and can't help but to smile because life is perfect for just a moment :)

Friday after an eternal week of work we stopped at our favorite restaurant Cafe Rio, and headed over to the park with our dinner.  The sun was shining for the first time all month so we layed in the grass and watched little kids play in the field.  (Not in a stalker-ish kind of way).  We walked around the park and watched a game of little league base ball!! It was so cute to see these little kids running to first base, and forgetting to turn to go to second, and just keep running into the outfield!  We decided we want to be those mom and dad's who cheer like crazy for their little kid whether or not they even hit the ball!

Later that night we happened to drive by the nickel arcade, so we stopped in to check it out.  Needless to say, an hour and a half later and 3$ worth of nickels, we were exhausted from playing air hockey, basketball shoot out, ski ball, whack a mole, and other good ole' school fun games!

We love our weekends.  I worry sometimes that we have to be too grown up now becuase we have jobs.  Sometimes it feels like all we do is work, sleep, work, sleep.  Trying to break up the routines during the weekend helps a lot!

P.S. Sorry we didn't get any pictures.  We didn't have our camera, but it reminded me that we should bring it everywhere for random weekends like this!

Who Knew

1. Raw tomatoes are yucky.  And tomato plants smell funny.  Ironically we are growing them right now.

2. I am always hungry, and I eat a lot.

3. I am a major home body.  I miss home when i'm gone, and I would almost rather be at home than anywhere else.

4. I miss pole vaulting.  I wasn't even that good at it, I just wish I didn't have to stop when I did.  BYU-Idaho didn't have pole vault as part of their track team.  Lame

5. Sometimes I feel like a grandma.  I like to bake, knit, sew, and crochet.

6. I loved college.  I didn't love studying, but its an amazing feeling when you actually use what you learned in class!

7. I have a very poor memory for books i've read.  I have read several books twice becuase I forgot what happened.

8. Food on my plate can't touch.

9. Spiders are gross.  Really gross.

10. I wish I was a runner. I was once, what happened?

11. I like even numbers

12. Checking the mail is pretty exciting

Almost Monday

Monday is now my favorite week day.  Weekends don't count!  I love Mondays so I can do laundry, clean house, and yep.. craft!  I decided about 3 seconds ago that our bed needs some fun pillows to add some color.  Considering we don't always make the bed, I don't want to spend lots of money on pillows that may live on the floor a good portion of the day.  Here is one link I like for easy directions for a ruffle pillow.  Click Here. And then Click here!

Oh and Ikea has pillow forms for 2 dollars!!  Woot!

They're Alive!

Since Bryan and I had not seen a pea or bean sprout in about 2 days (you can tell how patient we are), we decided to peek and make sure they were alive. There were little teeny sprouts, so we quickly covered them up and tried not to disturb them.  Yesterday we woke up and saw this!  It was like a mini Christmas!  Ready to harvest yet??
